Cuisine in Triana
Andalusian cuisine with market-fresh, seasonal produce, cooked in harmony with the seasons to preserve their qualities and original flavours. We seek out local producers who offer us fresh, locally sourced ingredients, without intermediaries and without travelling long distances.
Our menu features dishes made with Iberian pork from the mountains of Huelva, fish from the estuaries of Cádiz, seafood from the Isla Cristina fish market, mushrooms from the Picos de Aroche mountains, and vegetables from the gardens of the Guadalquivir Valley.
Architecture and gastronomy
The restaurant was designed as an integral part of the building by architect, owner and chef Manuel Llerena. The key features of the location—the riverbank, water and vegetation—are reproduced inside, where a splendid vertical garden topped with a suspended pond breaks up the space, helping to create different atmospheres. Andalusian wines
We prepare our dishes using Andalusian olive oils, carefully selected and paired according to each ingredient, and accompany them with Andalusian wines. Our wine list takes advantage of Andalusia’s remarkable winemaking heritage, with 25 Protected Designations of Origin, including some of the oldest in Spain: Málaga, Jerez-Xérès-Sherry and Manzanilla-Sanlúcar de Barrameda.
Walking by the river
De la O occupies a special spot next to the historic Guadalquivir riverbed; Emilio Sánchez Perrier painted it in the 19th century, and it continues to captivate us today. From the restaurant’s terrace, elevated above the Paseo de la O, we can enjoy the sunsets, the trees… we assure you that from here, touching the sky of Seville is easy.
Pottery tradition
Triana is tradition, and among them, pottery. In the restaurant we wanted to keep it present and our interior design is born from the roots of the neighbourhood, the wall that presides over the restaurant is ceramic. In addition, our tableware has been designed by us and is fired in our ceramic kiln. We are the neighbourhood, we are Triana!
